FOOD PREPARATION

(Contra Covid19)

1. Washing of hands before and after cooking.

Our kitchen staff always wash their hands even before this Corona Virus pandemic happened. They do not wear gloves because we believe working with clean bare hands is more hygienic . You can even ask Gordon Ramsay, a known Chef, and he'll tell you the same.

2. Wearing of face masks and protective hats.

Aside from making sure that our staff has no colds, cough or fever before he can enter the kitchen, we require him to wear a face mask and a protective hat. We are also one of the restaurants here in Davao City that has a glass kitchen wall, thus, you can see how our staff handle the food right before your eyes.

3. Cooking the food thoroughly.

We make sure that the food is cooked thoroughly by setting the right fire and temperature. Our kitchen is fully equipped and spacious enough to implement social distancing. Right now, we implemented the "one working staff only" isolation rule inside our kitchen to enhance food safety.

4. Prevent cross-contamination during plating.

After cooking, we immediately transfer the food into a plate ready to be packaged inside a container. The cook ensures that there is no cross-contamination during the process by always using clean and sanitized utensils.

5. Frequent washing of hands before and during container preparation.

It may be too reassuring to say, but washing of hands every now and then was already a habit of our kitchen staff even before this pandemic happened. That's the number one reason why they do not wear gloves, except only during equipment cleaning time or kitchen maintenance.

6. Transfer the food with clean hands and protective gears.

After making sure that the container to be used is brand new and clean, the cook transfers the food into the container, still wearing a face mask and a protective hat.

7. Pack the food container with new and clean paper bag.

Once the food container is properly sealed, it's time to pack the container inside a paper bag..

8. Properly seal the package before turning it over to the server.

The final procedure inside the kitchen is to properly seal the package.before handling it over to the server waiting outside the kitchen area.

9. Server should also wear a face mask and protective hat when handling the package.

The server who receives the package through a small kitchen window is also wearing a face mask and a protective hat. This ensures a continuing process of food safety even after the food leaves the kitchen area.

10. Server will then give the clean package to the waiting delivery man.

The server will then hand over the sealed package to the waiting delivery man stationed outside the restaurant. We do not allow them to go inside for isolation purposes.

11. Kitchen is always sanitized and cleaned, ready for the next cooking session.

After the cooking process, the staff repeats the process of cleaning the kitchen area and the utensils, to minimize, if not fully prevent contamination of any bacteria and viruses. We did our share (as a provider) of making the food safe for consumption, so please do yours also (as a consumer) by washing your hands or by re-heating the food before eating.
